Corbarino little tomato of the Lattari Mountains preserved in water and salt. Intensely red colored, oblong shaped, and typically bittersweet. These are the main ingredient for the so called “vongole fugute” (escaped clams) sauce & are able to provide the sauce with a seafood aroma, even if clams are not featured at all!
Use in a simple tomato sauce, with seafood, or homemade pizza.
